Simple, easy and delicious rice recipe with corn kernels, onions, capsicum and whole Indian spices. Corn rice is a nice variation to the good old pulao or chawal recipe.
Ingredients
2 cups of steamed rice
250g of sweet corn, boiled
3½ tomatoes pureed
2 onions, chopped finely
1 large capsicum, chopped
Coriander leaves
A pinch of hing (asafetida)
Few curry leaves
Few slit green chillies for garnishing
1½ tbsp garlic-ginger paste
1 tsp red chilli powder
Salt to taste
½ tsp of haldi powder (turmeric powder)
1 tsp of rai (mustard seeds)
2-2½ Oil for cooking
