Melt in the Middle Cheesy Garlic & Herb Pancakes

AD / @kitchenwithmba asked me to cook up something special for Pancake Day...
I was tempted to do something sweet with their GORGEOUS Sicilian Lemon Pancakes, but as you know, I'm a savoury girl...so I decided to make Melt in the Middle Cheese Pancakes, with not just butter, but garlic and herb butter!
These were just SO good perfectly fluffy, very cheesy...served with a bit of salad and Taste the Difference Dry Cure Bacon, this might be the best pancake dinner I've EVER had!

Makes 5 pancakes
140g self raising flour
1 tsp baking powder
20g soft butter (plus extra for frying)
140ml milk
2 eggs beaten
1 tsp finely chopped fresh chives
5 slices of Sainsbury's Sliced Gouda
Cheese
For the garlic butter:
30g butter
1 tsp Sainsbury's dried parsley
1 tsp Inspired to Cook Garlic Paste
Serve with Taste the Difference Dry Cure Bacon and salad
Sift the flour into a bowl and stir in the baking powder.
Make a well in the middle. Add the butter and milk, chives and beaten eggs.
Season with salt and pepper.
Whisk until smooth and leave to stand for 10 minutes.
Heat a small knob of butter in a non-stick pan on a medium heat. Spoon thin circles of batter into the hot pan, roughly the size of the top of a mug. Tear a slice of gouda into quarters.
Arrange all 4 quarters on top of the pancake batter as soon as it goes in the pan. Gently press it into the batter.
Drizzle a little more batter over the cheese and spread a thin layer until the cheese is covered.
Fry until little bubbles start to open up in the batter.
Turn them over and fry for a couple of minutes until golden brown on both
